Position Summary
Affinage is at the core of what we do at Murray’s. The Affineur is responsible for maintaining cheeses within the caves, prepping cheeses for sale, assisting with QA activities, and sanitizing the workplace. The Affineur works independently but trains new employees when called upon. The Affineur is equally a part of the Quality Control/Food Safety team and is integral in ensuring that we are selling safe, quality food.

What You Do
- Cheese Ripening and Quality Control: Ensures that every cheese in our caves receives proper and individual care. Works with our caves team to complete daily cave tasks, including cheese washing, flipping, miting, etc.; in addition to maintaining and making various cheese washes, purified water, and other affinage ingredients. Works closely with caves leadership to improve quality standards and practices for cheese sold across all channels. Aids in the prioritization of affinage tasks and assignments on a daily and weekly basis. Identifies product quality issues in advance of spoilage. Assists with quality assessments and tastings.
- Food Safety: Ensures that proper GMPs are followed when handling any cheese in our caves. Takes personal responsibility for upholding food safety standards. Cleans and sanitizes dishes as necessary and ensures proper chemical dilutions. Assists with routine swabbing and sample collection for pathogen testing. Ensures that no cheese is removed from the cave for sale prior to QA clearance.
- Inventory management: Wraps, labels, and boxes cheese according to specifications. Manages rotation of all cheeses as they travel through the caves and cold storage. Ensures proper tagging of all cheeses for traceability purposes. Assists in conducting weekly inventory counts.
- Communication: Works amicably with fellow cave workers and production employees. Organizes workflow to maintain separation from production activities. Trains new Cave Assistants and Interns on how to perform essential duties. Informs caves leadership when there are any quality concerns.
- Workplace Safety: Establishes, follows, and enforces safety standards and procedures in compliance with a healthy work environment and legal requirements. Develops protection and access policies and coordinates security patrols to keep the property secure.
- Participates in ongoing education to update job knowledge.

What We Need From You
- 1+ years working in a food production/restaurant environment
- Great attention to detail
- Ability to work independently
- Strong organizational and communications skills
- Cheesemaking or Affinage experience is highly desirable
- A sincere passion for our core products of Cheese & Charcuterie
